Great Tequila Starts with Great People
At the heart of Casa Del Santos is Master Distiller Miriam López, a native of Arandas, Jalisco, with more than 26 years of experience in the art of tequila making. One of the few female Master Distillers in Mexico, Miriam brings together generations of tradition, technical expertise, and a distinct sense of creativity to her craft.
From carefully selecting each agave to refining the final spirit, her approach balances precision with artistry, allowing the natural character of the agave to guide each expression. Her creativity, passion, and unwavering dedication to quality are reflected in every bottle of Casa Del Santos.
Our Process
Sourcing
Our process begins in the Highlands of Jalisco, where rich red soil and an elevated climate create ideal conditions for Blue Weber agave. After years of maturation, each agave is carefully selected and harvested by skilled jimadores, revealing the piña at its heart and the natural sweetness that forms the foundation of Casa Del Santos Tequila.
Slow Roasted
From field to fire our agave piñas are slow-cooked for over 70 hours in traditional brick ovens, allowing their natural sugars to develop gradually. This extended cooking process draws out a rich, natural sweetness while creating greater depth and complexity in the final spirit.
Extraction and Fermentation
Once cooked, the softened agave is crushed to extract its naturally sweet juices. Those juices are then fermented, transforming the agave’s natural sugars into alcohol while building layers of aroma, flavor, and complexity.
Distillation
Following fermentation, the spirit is carefully distilled in traditional copper stills, allowing for greater control and precision throughout the process. Copper helps refine the spirit and remove unwanted compounds, resulting in a tequila that is clean, smooth, and true to the natural character of the agave.
Aging
While our Blanco is bottled unaged to showcase the pure character of the agave, the Casa Del Santos story will continue with our Reposado and Añejo expressions, coming soon. Each will be thoughtfully aged to develop deeper layers of flavor, complexity, and character while staying true to the spirit at its core.
